Stir-frying Pad Thai

In Thailand Pad Thai is found mainly on the streets cooked by street vendors. The dish is actually an adaptation of a Chinese noodle dish, Guay Tiow Pad with several substitutions to accommodate Thai tastes. It was called Pad Thai (Stir-fry Thai style) to distinguish it from the Chinese version. It really lies at the periphery of Thai cuisine in Thailand and it seldom even makes a Thai’s list of favorite noodles. (Kasma’s recipe plus more information — Opens in new window.)
