Cooking an Oyster Omelette

This two-wok-shoveled maa krua (“mother of the kitchen,” or cook) is making Savory Pan-fried Mussel Cake with Wilted Bean Sprouts (Hoi Malaeng Poo Tawd) at Aw Dtaw Gkaw market in Bangkok. As with most Thai markets, there’s a combination of stands selling produce and other fresh ingredients and those selling food to eat, some of it fresh-cooked, as here. People who are too scared to eat street food are missing some of the best food in Thailand.
